FOOD

  • We purchase local and/or organic food when possible.
  • We have a 'demonstration' heirloom vegetable garden.  In our first year tomatoes, peppers, okra (pictured right), cilantro, parsley, potatoes, peas and beans were used in our kitchen. 
  • Our first popcorn harvest grown in our heirloom garden was popped as a refreshment for The Gleaners and I movie night!
  • We have an herb garden oustide the kitchen to provide the chef's with fresh herbs.
  • We serve Fair Trade coffees and teas in our dining room, conference rooms and in Sr. Catherine's Coffee Corner.
  • We are a member of CT NOFA and are working with the CT Department of Agriculture to try and increase our purchasing of local, sustainable and/or organically grown/raised foods.
